Every once in a while you come across something really special. We just did. We found a producer named Edwin Noreña of @campohermoso coffeefarms who is producing a one of a kind coffee bean.
The cherries are soaked in water for four hours, then undergo carbonic maceration for 72 hours with mossto (juices from the cherry). Followed by another 72 hours with mossto, red fruits, and wine yeast. Then it is sun-dried for 3-4 weeks.
Our own @baroncorbinwwe and @figurefilbert have spent weeks working on this roast.
